Carlos Pola is one of the most forward-thinking producers in El Salvador. From experimental cultivation methods to wild fermentation approaches, he’s constantly pushing the boundaries of coffee, and we’re lucky enough to taste the results.
We first met Carlos in 2019, the year his coffees were imported to the U.S. for the very first time. Before that, his work was only available in Europe and Asia. It was love at first sip, and six harvests later, we’re still proudly buying his coffee every single season.
What keeps us coming back isn’t just what’s in the cup, but what’s happening on his farm. Carlos practices regenerative agriculture, relying on nitrogen-fixing shade trees, organic fertilizers, and beneficial fungi to improve nutrient absorption and soil health. Many of these practices run counter to what local agronomists recommend; yet, his land is among the healthiest, most biodiverse coffee farms you’ll find in El Salvador.
And there’s more: this is Carlos' second harvest as part of our blockchain traceability project, built in partnership with Bext360 and Catracha Coffee. The system tracks his coffee from harvest all the way to you, ensuring fully transparent supply chains and wage accountability.
It also supports our shared profit-share program: for every bag sold, $1 goes directly back to Carlos once the lot has sold out. He’s investing those funds into improving working conditions on the farm—better sanitation, workwear, safety gear, and medicine—investments that build long-term well-being for his team and community.
