Reminds us of -- Cherry Cordial & Aperol Spritz
Don Senel & Allan Campos // Finca La Toboba, Brunca, Costa Rica
Anaerobic Natural Villa Sarchi // 1800+ masl
For more than five years, we’ve had the privilege of sourcing coffee from Don Senel Campos and his son Allan in Costa Rica’s mountainous Brunca region, a relationship cultivated through our friends at Selva. Earlier this year, we had the opportunity to visit the Campos family firsthand and spend time on their farms, continuing a connection that has become a meaningful part of our sourcing program season after season.
This release showcases Allan's processing skills through his perfectly controlled anaerobic fermentation of a Villa Sarchi variety produced with incredible care and precision. After the fermentation process, the coffee was dried with the fruit layer intact. We cupped this coffee right on the farm and were blown away by the balance of fermentation notes with the sweetness and acidity of the Villa Sarchi variety itself. This is truly anaerobic processing at its finest, and it's no wonder that the Campos family continues to make a name for themselves as one of the top producing families in Costa Rica.
Expect notes of cherry cordial, sweet clementine, and a sweet Aperol spritz vibe with a juicy sweetness, vibrant acidity, and a deeply elegant finish. A complex yet approachable coffee that perfectly reflects why we continue returning to Don Senel and Allan's coffees year after year.
