We were first introduced to Don Carlos Pola on a Facetime call organized by our friends Nicole and Kevin from Roam Bravely. Nicole and Kevin had randomly met Don Pola a few months prior while at a coffee conference in El Salvador, and they instantly connected over their shared passion for speciality coffee, environmental stewardship and the empowerment of smallholder farmers. Don Pola is a visionary cultivator utilizing low-impact farming and processing techniques at his farm and micro-mill in Juayúa, and Nicole & Kevin brought back samples for us to try hoping we’d be open to working with him. The samples were incredible and after meeting the man on Facetime, we knew we had to buy Don Pola’s coffee. This particular offering is our first purchase from him and we couldn’t be more pumped to be rolling it out. It’s a dry-processed (natural) lot with zero water waste. This processing technique creates unique fruit-forward flavor profiles and is a great example of the excellence of Don Pola’s coffees and his environmental stewardship.
